DIY STRAWBERRY SHORTBREAD POPSICLES! THE PERFECT SUMMER TREAT…
Hands up who know it’s national strawberry shortbread day on the 14th June? We’re normally rubbish at remembering those days and only tend to find out about them when it’s too late, but not this time my friend! Oh no, we’re hitting you up with this recipe a whole 2 days early so now you can enjoy this tasty treat we whipped up on the actual day too!
YOU WILL NEED:
1 cup of fresh chopped strawberries // 1 cup of vanilla flavoured natural yogurt // 1/2 teaspoon vanilla // 1 tablespoon of butter // half a cup of milk // 1 cup of shortbread (grounded in a food processor) // Lolly moulds //
STEP 1:
First, whisk together your yogurt, vanilla & milk until smooth. Then mix in your strawberries!
STEP 2:
Divide your mixture between each of the ice lolly moulds, you’ll need to leave about an inch from the top of your moulds ready to later add in your shortbread crust. Then when you’re done, pop them in the freezer for about an hour.
STEP 3:
Meanwhile, melt your butter and add it to your shortbread crumbs int he food processor. Keep blending until you’ve achieved a damp sand consistency.
STEP 4:
Once your ice lollies have been in the freezer for an hour it will be time to add in your shortbread crust! Divide the mixture into the top of each of your moulds and make sure you give them a little press down to make sure everything is nice and compact!
STEP 5:
Finally, add in your ice lollies sticks then place them back in the freezer for a further 6 hours!
Then all that’s left to do is enjoy! We’ll warn you though, once you have one…it’s kinda difficult not to have another! Good job these bad boys are pretty darn healthy! YUM! xx
