VEGAN WHITE CHOCOLATE RECIPE WITH GOJI BERRIES
When I originally had the idea to post a vegan white chocolate recipe on the blog I wanted it to go on as a cute valentines recipe as something easy that you could whip up and give as a fun gift, nevertheless we had to jiggle things around in the schedule and we moved it to post V-day, that doesn’t matter though because let me tell you, these delicious vegan white choc bites are great all year around! They would especially make yummy homemade wedding favours or they could be served on the dessert table or even at a bridal brunch! And the best news? You only need 3 ingredients…
YOU WILL NEED:
1 Cup cacao butter // 1 cup coconut butter // 2 tbsp maple syrup // 2 tbsp goji berry powder (or substitute for 1 tsp of beetroot powder) // A loaf pan (or moulds) // Baking paper (if using a loaf pan) // Desiccated coconut (optional, for sprinkling) //
STEP 1:
The cacao butter I bought was already in little button shapes but if yours isn’t then chop it up until small blocks then add this and your coconut butter to a bowl rested upon a saucepan of boiling water. Stir until everything has melted nicely together.
STEP 2:
Add in the maple syrup and goji berry powder (or beetroot powder) then line your load pan with baking paper and pour the mixture into the pan.
STEP 3:
This step is optional, but if you like, sprinkle the chocolate with desiccated coconut to give the chocolate a pretty texture on the top. I also think some freeze drired berries on top would be delicious!
STEP 4:
Freeze for 1-2 hours then cut into chunks with a hot knife!
I also think these would be super cute in moulds if you didn’t want to serve them in blocks, can you imagine little heart versions of these?! So sweet! xx
