VEGAN & GLUTEN FREE STAMPED MARBLE COOKIES
One of my favourite things about DIY’ing is when a DIY disaster turns into a happy accident. You might remember, I made these Abstract Sugar Cookies in February which were actually meant to be Terrazo effect but ended up more like a 90’s abstract print. During that faux pas I also discovered that if your put a spot of gel food colouring into ready to roll white fondant and knead slightly, instead of totally dying the icing, it creates a beautiful marble effect which I just had to re-create the next time I tried my hand at baking. So using the exact same recipe and colours, and with a helping hand from Cerys my helpful pro baker, I made these beautiful marbled cookies and used a stamp to personalised them as I thought they’d make perfect favours or place names at a wedding.
YOU WILL NEED:
335g, Vegan Margarine
300g, Caster Sugar
Egg Replacement (You’ll need to follow the packet instructions for the equivalent of 3 whole eggs)
1 tsp, Vanilla Bean Paste
1 tsp, Salt
2 tsps, Baking Powder
900g, Gluten Free Flour (+ more for rolling out dough)
2, Ready to Roll White fondant
Gel Colour in colours of your choice
Rolling Pin
Baking Tray
Round cookie cutter or just use a wine glass like we did.
Make the cookie dough and cut into circles and bake following the same recipe as our Abstract Sugar Cookies.
Once the cookies are cool make your marble fondant. The key is to make sure you use the fondant as soon as you’ve dyed it as the more you handle it the more the colour seeps in losing the marble effect. Depending on the number of colours your using, cut 1 block of fondant into equal portions. We used 5 colours so we divided one block into 5.
Add 1-2 drops of gel food color to your fondant and knead until you get a marble effect.
Roll out your fondant and cut into circles using the same size cookie cutter.
Sprinkle a little bit of water on top of the cookie and place the marble fondant on top.
Finally stamp the names or words you’d like into your cookies.
