3 BOOZY ICE POPS TO MAKE THIS SUMMER!
Happy Friday lovely people! It’s my Birthday on Sunday and I’m throwing a little mini party with the girls at my house before we head out for a night on the town, I always look forward to this every year, coming up with fun ideas for the little pre drinks session! This time I thought it would be cute to make a bunch of boozy alcoholic ice pops that I can keep in an ice bucket and everyone can help themselves to! Please be sunny tomorrow….PLEASE! Here’s how you can make a bunch of the same ones I’ve made…
TEQUILA SUNRISE
First up is the tequila sunrise! Now don’t cringe, I know some of you hate tequila but this one really is delicious, it’s got fresh blended pineapple inside and who can resist the pretty ombre effect it makes on the ice pop!
YOU WILL NEED (MAKES 12 ICE LOLLIES):
3/4 Cup tequila // 2 cups of pineapple juice // 1lb fresh pineapple, peeled and blended // 1/4 cup grenadine //
STEP 1.
Combine the blended fresh pineapple, pineapple juice and the tequila into a jug and stir well.
STEP 2:
Fill the ice pop moulds about 3/4 full (my moulds had a little fill line on them which was really helpful!)
STEP 3:
Finally, pour about one 1 teaspoon of grenadine into each pop and allow it to sink to the bottom of the pop. Then press it into the bottom of the mould and give it a little mix at the bottom by massaging the bottom half of the lolly to create the ombre effect! Then quickly pop them in the freezer!
BLUE LAGOON
This one is for the vodka fans and I absolutely adore the colour of this one! It’s a beautiful shade of blue and really POPS against the other ice lollies!
YOU WILL NEED (MAKES 12 ICE LOLLIES):
2 and a half cups of lemonade // 2 tablespoons of blue curaçao // 4 tablespoons vodka // 6 drops of blue food colouring (optional) //
STEP 1:
In a jug combine all of the ingredients except for the blue food colouring.
STEP 2:
The blue curacao will make this mix a light shade of blue anyway but if you want it to be a little more vibrant then add in the drops of food colouring, I did for these ones and I think it made the colour much better.
STEP 3:
Finally pour into the moulds and freeze!
AMARETTO SOUR CHERRY BOMBS (MAKES 12 ICE LOLLIES)
This one is hands down my favourite! Granted, it’s not the prettiest of the bunch but in my opinion it’s the tastiest! I must admit I am bias because amaretto is my favourite drink but who can resist a cherry flavoured cocktail…
YOU WILL NEED:
2/3 cup of orange juice // 2 cups of frozen cherries // zest of 1 lime // 1/3 cup lemon juice // 3/4 cup amaretto //
STEP 1:
Add all of your ingredients to a blender and blend until smooth, you don’t have to blend it too much, a few chunky cherries in there is super tasty!
STEP 2:
Pour into the moulds and job done!
They’re so fun right?! I left all of the popsicles to freeze overnight just to make sure that they were definitely solid! The best part is you can make these way ahead of time and just leave them in the freezer, I think they would be so fun at a summer wedding or even at a bachelorette party!
