MAKE THESE DELICIOUS VEGAN BLUEBERRY BOUNTY BARS
You guys! This might just been my favourite vegan recipe EVER! Yep, that’s right, big statement but I honestly can’t even tell you how delicious these bars are (not to mention ever so pretty!). If you love bounty’s then you’ll absolutely love these! They get their pretty purple/blue colours from blueberry powder and I was so excited to try out the arctic berries powder after pitching for investment along side these talented ladies in London a couple of years ago. It’s so awesome to see their product doing so well! Anyway, let’s crack on with the recipe shall we?
YOU WILL NEED:
1 cup light coconut milk
5 tbsp maple syrup
4 tbsp coconut butter
Pinch of salt
2 cups desiccated coconut
1 tbsp Arctic Power Berries blueberry powder
200g dark chocolate
A loaf tin
Baking paper
STEP 1:
Add the coconut butter, maple syrup, salt and milk into a saucepan and heat on low until everything has combined nicely. Then, take off the heat and fold in the desiccated coconut and blueberry powder.
STEP 2:
Line the loaf tine with baking paper then press the mixture down into the tin pressing firmly. Freeze for 2-3 hours.
STEP 3:
Slice into 12 bars and lay out flat onto another piece of baking paper. Then melt the dark chocolate.
STEP 4:
Coat with the melted chocolate. I found that the easiest way to do this is to place one of the bars on top of a fork (don’t pierce it) and then hold it over the bowl of melted chocolate and spoon it overtop so that the entire bar is covered. Then, freeze again for 30 minutes to allow the chocolate to set.
SO YUM! These will keep in the fridge for 3-5 days or alternatively pop them back in the freezer and pull them out 15 minutes before you want to eat them!
